What Is DHA in Monofloral Manuka Honey?

DHA, or dihydroxyacetone, is one of the lesser-known bioactive ingredients of pure Manuka honey. This is a very unique molecule and is part of the verification process of certifying genuine Manuka honey. DHA is most commonly known as the precursor chemical to methylglyoxal (MGO), which has been scientifically suggested to potentially have antibacterial properties. 

Originally found in the nectar of the Manuka flower, bees move the DHA from nectar and process the DHA along with the other components into the delicious, pure Manuka honey we all enjoy. 

Unlike MGO, which measures the potency of Manuka honey, DHA is a measure of shelf-life. Why, exactly? As DHA is the precursor and will over-time transition into MGO, this factor is an excellent method of understanding how long this specific honey will be potent. 


What Is HMF in Monofloral Manuka Honey?

HMF, or hydroxymethylfurfural, is a mouthful of letters but plays an integral role in ensuring the freshness of New Zealand’s rarest honey. How exactly? HMF is a heat-sensitive compound which is an important measure for understanding if the Manuka honey has been tampered with. Heating Manuka honey can lead to an increase in HMF, which has been suggested to be potentially toxic. 

This is why Primal by Nature has set a strict line about the concentration of HMF. To ensure there is no toxicity or lack of freshness, HMF concentrations do not exceed 40mg/kg. Are There Any Other Chemicals That Contribute To Pure Manuka Honey?

Along with DHA and HMF, leptosperin and MGO are also measured before awarding a UMF grade. 

While these four are paramount in understanding the quality and strength of Manuka honey, there is a very unique set of guidelines outlined by the Ministry of Primary Industries (MPI) - a branch of the New Zealand government. The criteria for New Zealand to recognise Manuka honey is very strict due to the cultural and economic significance of the product.
